The Recipe

A sauce that tastes like it was cooked, not blended.

Most bottled hot sauces are made by combining vinegar, water, salt, and industrial capsaicin extract. Ours is made by taking whole smoked morita chilies, softening them in Sonoma vinegar for a day, then simmering them for six hours with garlic confit and Maldon salt until the pot smells like the corner of a kitchen you never want to leave.

That is why our bottle is small. That is why the sauce is not the color of a warning sign. That is why we can only make eight hundred bottles a month, and why you should probably not put it on eggs.

  1. How hot is it, actually?

    About a five on a ten. It builds. If you like a good hot honey, you will like this. If you eat spicy tuna and cry, respectfully, sit this one out.

  2. What do I put it on?

    Roast chicken. Pasta with butter. Grilled bread. Anything with an egg (we know we said not to). Ramen. Absolutely not tacos. We love tacos, this is not the sauce for tacos.

  3. Is it vegan? Gluten free?

    Both. Four ingredients, all plant, no cross-contamination in the kitchen. Kosher pending as of August.

  4. How long does a bottle last?

    Unopened, twelve months in the pantry. Opened, refrigerated, eight weeks. And you'll finish it in three.

  5. Do you ship internationally?

    Canada and the UK, yes. Europe by end of year. Everywhere else, join the list and we'll email when your country goes live.

  6. Why is it $18? That's a lot for hot sauce.

    Because six hours of cook time, whole imported chilies, and eight hundred bottles a month is not cheap to make. If you would like a $4 bottle of hot sauce, we recommend one. The yellow one.
